Celebrate Mother's Day........like a Swede!
Mother's Day is always so special because we take the time to celebrate the love and affection we have for our family, our friends, our relatives and mostly.........our Mother's! Such an occasion deserves some careful attention to detail, but at the same time, something easy for a family gathering so that you don't spend the entire dinner hidden in the kitchen away from your mother!
My suggestion would be to start with either the Toast Smgen or the Toast Skagen. Either one of these alternatives is extremely easy to prepare and can be made a day in advance! You could serve them on a canap￩ as a passing hors d'ouvr￩s as your guests arrive, or individually plated for a more formal setting! A slightly chilled bottle of Sjoeblom's Champagne would pair nicely with either of these alternatives!
Next, I would recommend a cup of the Chantarelle Mushroom Soup topped with Crispy Prosciutto and Lingonberries or the Mixed Spring Lettuce with Danish Castello Cheese Crustini and Blackberry Vinaigrette. Either of these would pair nicely with ZD Pinot Noir!
For a dinner entree, I would recommend our Herb-crusted Beef Tenderloin Roast with Morel Mushroom Demi served with French Potato Gratin and Fresh Asparagus Spears. Trinchero Family Estates have a couple of nice Cabernet Sauvignon varieties that would pair perfectly with this dinner. You could either serve the meal family style for an easy alternative. Or serve individually plated for a more spectacular presentation! Believe it or not, but French Potato Gratin is a staple in Swedish Cooking! Probably because the Swedes love their potato dishes and because most of modern Swedish Cuisine is inspired from the French!
For dessert, our Cloudberry Parfait is a must! This can be made up to two days in advance and the flavor is to die for! Every time I make this.....I am so pleasantly surprised over how easy it is to prepare!! You could always serve a nice Muscat or a Vintage Port to round off the Mother's Day experience!
