CHEF MATT ANDERSON
Staffan and I were extremely lucky to wake up one crazy Absolute morning to find a true shining star in our restaurant kitchen! Matt was our Chef de cuisine for over 6 1/2 years at Absolute! Extremely creative and talented, Matt is one of my favorite chefs of all time! Some of the wonderful dishes Matt created for us at Absolute include our Cashew Crusted Sea Bass on a bed of Leek Puree, drizzled with Lingonberry Chutney and Butternut Squash Soup with Crispy Cinnamon Wonton Skins!

My husband, Staffan took Matt on a couple of culinary trips to Mexico, France and Sweden. I took Matt and ´┐ůsa, our Swedish Chef, to Napa Valley for a wine tour of some of our favorites, Marimar Torres and Ravenswood Wineries! We had so much fun wining and dining in San Francisco and in the Napa Valley! Our lunch at Spago consisted of 5 appetizers, 3 salads, 4 entrees and 3 desserts! Of course we didn't eat all of the food, but I always love to try a variety of new dishes every time I am out at a restaurant!

Matt helped us open Dijon Bistro Provencale, our French Bistro. Our tasting menu consisted of some Creamy Escargot Bleu d'Bresse and a Pistachio Nut Country Pate that was totally awesome!

Cuddly as a bear with a heart of spun honey, Matt is truly a wonderful person and honestly one of the most talented chefs that worked for us during our 20+ years in the restaurant business!
