CODORNIU
Located a hop, skip and a jump from Barcelona, in Sant Sadurni d'Anoia, Spain, this exquisite winery makes some of the best Spanish Cava's! We were fortunate enough to serve their Codorniu Classico and Codorniu Original Cava's at our Restaurant Magasinet in Sweden! Today, my husband has added the Codorniu Pinot Noir Brut, a rose Cava, to his wine list at Gold Canyon Golf Resort in Arizona! These are spectacular wines and pair so nicely with seafood, fish dishes, soft cheeses, dried fruits and nuts! Especially our Scandinavian and Mediterranean dishes!!
Codorniu is one of the world's oldest family enterprises, dating back to 1872 when Josep Raventos created some of the first Codorniu Cava's!
Codorniu is kindly supplying me with some of their Pinot Noir Brut for the launching of kimistyle at the Minneapolis Food & Wine Expo! Isn't that awesome!! This way my audience will have the chance of sipping some heavenly bubbly and nibbling on scrumptious seafood snack, while I create some wonderful kimistyle dishes in front of them on the Macy's Culinary Grand Stage!!
We will be visiting Codorniu and will showcase the winery in a video format as well once we get back from Spain this fall! Until then, try to make a special effort to find any of their wonderful Cava's! They are all made in the "Traditional Method" with a secondary fermentation of the wine in the same bottle in which it is sold; the bubbles are formed naturally. Sparkling wines made in this traditional method produce finer, more persistent bubbles than those made by other methods, such as adding CO2 to a still wine or by other methods such as GranVas.
